Lighten Up Blog Hop

Hi! ....and welcome to the Lighten Up Blog Hop! Yes, I'm a day late (and usually a dollar short ;) ) due to technical difficulties....but, here I am!
 This hop is hosted, as always, by Beverly and our theme this month is cold sides or salads.

Cucumber Ribbon Salad

Trim the ends off two medium cucumbers, then cut in half lengthwise and peel into strips. I recommend using a cheese slicer like this to cut the strips:


Whisk 2 Tbs. rice vinegar, 1 Tbs canola oil, 1/2 tsp toasted sesame oil, 1/2tsp honey, salt, and pepper. Toss the dressing with the cucumber and some toasted sesame seeds.

This is yummy and easy and kids really like it too! I calculated the calories for this tasty dish at around 45 per serving and two cucumbers makes 4 servings. No guilt at all...perfect for a summer evening on the patio.
